I grew up believing that a cake with carrots inside was weird, until very recently, when I was wandering through the streets of Vienna and decided to stop at a local coffee shop and order a Carrot Cake with Cream Cheese Frosting. And it is was love at first sight.
I searched for the perfect recipe for a while and after many tests, I found the one.
And it is with great pleasure that I share with you my favorite Carrot Cake with Cream Cheese Frosting recipe.

Ingredients
For the Carrot Cake
- 3eggs
- 1 pinchvanilla
- 1 spoonwhisky
- 1 teaspoonsalt
- 1 cupsugar
- 2 cupsflour
- 1.5 teaspoonscinnamon powder
- 1/4 teaspoonsnutmeg
- 2 teaspoonsbaking powder
- 1 cupOil
- 2 cupscarrots (Finely grated)
For the Cream Cheese Frosting
- 175 gCream Cheese (Equals to 1 pack of Philadelphia)
- 3 spoonspowdered sugar
For the Decoration
- q.s.walnuts
Preparation
Carrot Cake
Start the preparation of your carrot cake by preheating the oven at 180°C.
With a mixer, whisk the eggs with the salt, the vanilla, the baking powder and the whisky.
Afterwards, add the oil, the flour and the sugar one cup at a time while always mixing.
Finally, spice up your cake by adding the nutmeg and the cinnamon and whisk them altogether.
Add the finely grated carrots to the cake mixture and mix them using a rubber spatula or a wooden spoon.
Transfer the cake mix to a previously buttered and floured cake mold and bake at 180°C for approximately 20 minutes or until a knife or a toothpick comes out clean.
Once baked, leave the cake to cool down at room temperature for at least an hour before unmolding it.
Cream Cheese Frosting
In a bowl, place the cream cheese along with the powdered sugar and beat them well together for a couple of minutes using a hand mixer.
With a spatula, spread the cream cheese frosting all over the cake and decorate the top with a handful of walnuts.
Advice
– The Carrot Cake with the Cream Cheese frosting should be conserved covered in the fridge.
– You can spice up your Cream Cheese frosting by adding a teaspoon of cinnamon when mixing it with the powdered sugar.
