Spanakopita: the Greek Original Recipe

The word Spanakopita is originally Greek: |spanaki| meaning spinach and |pita| meaning dough. Therefore, Spanakopita is a combination of puff pastry, spinach and Greek Feta cheese.
It is ideal for the summer season for different reasons:

Spanakopita Ingredients
  • 2puff pastry (Rolls, defrosted)
  • 200 gfeta cheese
  • 500 gspinach, leaves, frozen (Defrosted)
  • 1/2onion
  • 1egg
  • 1 pinchsalt
  • 1 pinchpepper
  • q.s.olive oil

Preparation of Spanakopita

  1. First of all, start by squeezing the defrosted spinach leaves in order to drain them very well.

    Once done, transfer them to a cutting board and finely chop the spinach leaves. Then, mince the half onion as well.

  2. In a big bowl, place the chopped spinach leaves, the minced onion, the greek feta cheese, the egg, a drizzle of olive oil and finally, a pinch of salt and pepper.

    Reducing the feta cheese into small pieces will facilitate the mixing process.

    Mix all ingredients until incoprorated together.

  3. Brush the bottom and the sides of a baking tray with oil. Then, start layering the ingredients.

    To start with, place the first defrosted puff pastry roll on the bottom of the baking tray. Using a fork, perforate the dough.

    Perforating the bottom dough avoids it from puffing and creating air bubbles.

    Spread all over it in a uniform manner the spinach-feta filling. Finally, cover it with the second defrosted puff pastry roll applying gentle pressure on the sides to seal the overall.

  4. To decorate and facilitate later on the serving of the Spanakopita, perform horizontal and vertical cuts with a knife in an attempt to create squares as displayed in the picture.

    Bake in oven at 180°C for 25 minutes approximately or until the puff pastry becomes golden.

    Let it cool before serving.
