Muhallabia is a Lebanese milk pudding, easy to prepare, tasty and very refreshing. It is usually served by Lebanese restaurants but by households as well.

Ingredients
Pudding
- 4 cupsMilk
- 3 spoonsSugar
- 2 teaspoonsRosewater
- 1 cupRice Flour
Syrup
- 1 cupSugar
- 1/2 cupWater
- 1 spoonRosewater
- 1 spoonLemon juice
Decoration
- 1/2 cupPistachios
Preparation of Muhallabia
Pudding Preparation
Start by preparing the pudding. In a saucepan over medium heat, add the milk, the sugar, the rosewater and the rice flour. Blend the mixture with a whisk in order to incorporate all ingredients together. You should keep mixing frequently over medium heat until the cream thickens. This will require approximately 15 minutes.
Once thick, transfer the pudding into a large serving dish or mold of your preference and refrigerate it.
Syrup Preparation
While the pudding is being refrigerated, you can start by preparing the syrup meanwhile.
In a small saucepan over medium heat, add the sugar, the water, the rosewater and the lemon juice. Blend all ingredients together and keep boiling until the thickening of the syrup. This will require approximately 10 minutes .
Decoration
Once the pudding has become cold, grind the pistachios in a mixer until sandy consistency. Cover the top of the pudding with pistachios.
Advice
– In order to facilitate the serving process, you can transfer the still-hot pudding into small cups or bowls and decorate each one of them. This way, you can serve one bowl per person.
– The Muhallabia should be conserved in the fridge.

This looks delicious! I’ve never tried this before, but I have heard of “milk puddings” and wanted to try some. I didn’t realize that the recipe was so simple & that I could practically make it at home, lol!
