I would like to share with you this week the recipe of Kourabiedes which are cookies baked in Greece for the occasion of Easter. They have a sandy consistency and are coated with powdered sugar. Kourabiedes are perfect for breakfast as well as snacks.

Ingredients

- 500 gButter (At room temperature)
- 10 spoonsWater
- 2Yolks
- 8 spoonsPowdered Sugar
- q.s.Flour
Preparation of Kourabiedes
Start by mixing the butter at room temperature using a hand-mixer for a couple of minutes until it becomes creamy.
While still mixing, start by adding the egg yolks, the sugar and finally water.
Once the mixture becomes uniform, start by adding the flour one spoon at a time while still mixing until the formation of a non-sticky dough. If you feel like the dough is still sticking to your fingers, add some more flour.
When the dough is ready, preheat your oven at 180Β°C. Flour your working surface and start kneading the dough for a couple of minutes and shape it into a ball.
Cut the ball into 4 quarters to facilitate your work.
Roll out one ball at a time into a flat sheet of a couple of millimeters thick. Cut the dough into your desired shape using a cookie cutter. Display a baking sheet on the bottom of an oven tray and transfer the cut cookies onto it.
Always knead the remaining dough, roll it out and use it to reduce to maximum the waste.
Bake each tray at a time for 15 minutes.

Advice
– Here’s a rule of thumb: never melt the butter for this recipe because it ruins the cookies taste as an end result.
– You can shape the cookies however you like. My grandma for examples, shapes them into O and S without using a cookie cutter.
– Kourabiedes have a rather long conservation time-span. Just keep them in a covered container or jar.
– If you’re an almond lover, you can add them crushed to the finished dough. You just need to knead it well to incorporate the almond crumbs into the dough.
