Chicken Avocado Salad

With the beginning of summer, hot meals become less desired and fresh salads are craved. This is why I thought of sharing with you one of my absolutely favorite summer dishes: Chicken Avocado Salad.
Rich in taste as well as in vitamins and proteins, this salad is all you need for the summer to keep you healthy and hydrated.

Ingredients Chicken Avocado Salad

For the salad

  • 3 cupslettuce
  • 1avocado (Big)
  • 250 gchicken breast
  • q.s.oil
  • 1 pinchsalt
  • 1 pinchblack pepper
  • 1 pinchgarlic powder
  • 2 spoonsparmesan cheese (grated)

For the dressing

  • 3 spoonsmayonnaise
  • 1lemon (Juice)
  • 1 pinchsalt

Preparation of the Chicken Avocado Salad

  1. First of all, brush the botton of a small pan with oil, lightly heat it and add the chicken breasts. Season both sides with salt, black pepper and garlic powder. Leave on low heat until the chicken breasts become white inside and out.

    Cooking the chicken on low heat may take more time, but avoids it from drying out.

  2. Once the chicken breasts are evenly cooked, cut them into thin strips and leave them aside to cool.

  3. In a big bowl, place the lettuce leaves. Then, cut the avocado into cubes and layer them on the bed of lettuce. Add the chicken strips and finally, sprinkle the grated parmesan cheese on top of them.

Lemon Mayo Dressing

  1. As a last step, pour the mayonnaise, the lemon juice and a pich of salt in a small jar. Close the lid and shake well to mix the ingredients together. Serve it with the salad.

– To add a crunchier note to this salad, I advise you to add some croutons or crackers.

– If you love strong tastes, you may add half teaspoon of mustard to the dressing.
